2014 - A mash bill of 65% Pilsner and 35% Unmalted Wheat that was turbid-mashed and boiled for three hours with hop pellets. Inoculated with Barrel #40 and fermented in and aged in two neutral Hungarian Oak 500L Puncheons.

2015 - A mash bill of 65% Pilsner and 35% Unmalted Wheat that was step-mashed and boiled for two hours with aged, whole-leaf hops. Inoculated with cultures from the 2014 brew and fermented in and aged in two French Oak 500L Puncheons.

2016 - A mash bill of 70% Pilsner, 20% Unmalted Wheat and 10% Malted Wheat was single-infusion mashed and boiled for two hours with hop pellets. Inoculated with cultures from the 2015 brew and fermented in and aged in two French Oak Pinot Noir 500L Puncheons. Read Less

For Blend #2, we chose a blend of not only our “Flanders - Inspired” red beer, but also used a touch of our French Oak Foedre Beer, a beer that lays the base for Fuzzy, and has been aging via a solera method for more than 5 years now. This blend was then moved to Missouri Oak and aged atop more than 3000 lbs of Oregon blackberries from our friends at Decker Farms. Saison du Blé is the harmony of a fluffy Wheat Saison and a traditional, rustic Saison with Brettanomyces and Lactobacillus. The wheat balances a very dry body with a creamy, billowy mouthfeel, and our house Saison yeast adds complexity and acidity. For Blend #7, it contains exclusively foedre-aged beer from a Medium-toasted Missouri Oak Foeder Crafters foedre. This was the first fill of this foedre, and the fresh wood imparted fantastic levels of oak that integrated really well into one of our favorite Saisons. A slightly bolder mouthfeel with a creamy vanilla finish lay over the tart body. Read Less

Blend #9 continues to focus on using our diverse sour, tart, funky and oak-aged barrel stock to create a unique beer which couldn’t be produced without the blending of these individual threads. A little more of an assertive Brettanomyces presence is softened by the Blackberry and Vidal Blanc portions to define what Pulling Nails Blend #9 is.

For the second blend of Pêche du Fermier, after barrel fermentation and maturity of our Saison du Fermier, we racked the beer to mostly neutral French Oak red wine barrels with peaches and then allowed it to re-ferment to maturity for more than a year. The more neutral oak, when compared to the first blend, offers a softer mouthfeel, allowing the fruit to continue to shine. Unlike most of our fruited beers, where we have been increasing our fruiting rates yearly to find that balance that we desire between our acidity and the fruit, for Pêche du Fermier, we kept the amount of fruit the same as Blend #1 to allow that base beer of Saison du Fermier to continue to shine. I'm excited to say that the pinnacle of our Saison production is ready! Tête du Cuvée Vintage 2019 is the next in line to release to you after an extensive blending session and a long rest in bottles to pull everything together, achieving that subtlety that is Tête. Named after the "head of the blend" in a Champagne house, we pull together the best barrels and expressions of Saison we have aging in oak. For Oude Fermier Vintage 2019, we experimented with blending younger Saisons, using what we learned to pull together these budding, more vibrant and hopefully more "aging capable" threads for this blend of Tête. The result is a nostalgic hark back to the first ever blend of Tête de Cuvée. This beer is also the first we have packaged with our new bidule caps - caps used in Champagne production to help catch the lees during riddling, but are also better at oxygen scavenging and more effective at creating an oxygen barrier when compared to standard beer crowns. They also create an awesome "POP", that sounds like a corked enclosure when you open them! Our intention is to blend a beautiful beer for the present, while embracing its aging potential.

The official blend is:

Threads of the Saison du Fermier recipe which were aged for more than 1 year in oak, thus becoming Oude Fermier. The blend consisted of 4 brews of Oude Fermier aged in White Burgundy barrels, Neutral French Oak Puncheons, a Neutral Missouri Oak Foedre, a lightly toasted Missouri Oak Foedre, and 225 Liter California Chardonnay Barrels for 13 to 20 months.
