2020 vintage. Sour ale fermented with local figs and maple syrup. Infinite Hibernation is both sweet and sour, with extremely rich aromas of fig, dates, brown sugar, fruit cake and background notes of cinnamon and toffee. The sweet maple syrup and intertwining of mild bourbon and rum characteristics in the flavor profile pair well with the bready malts and savory figs, almost like biting into a fig newton. All these flavors come together delicately and provide a warming to the beer that finishes with a beautiful tartness. The finish leaves a residual sweetness on the tongue but then quickly clears to a dry, soft sourness. Read Less
