Atacama is named after the darkest place on Earth. In the first batch we worked solely with currants sourced from NY State. This time around we’re using a blend of both domestically NY sourced and imported Scottish currants.
We also used a unique mixed culture fermentation for this batch marking its first commercial application in mead.
Aromas of fresh currants mingle with oak. Intense flavors of currants with a nice tannin balance. As big and boisterous as ever; yet, smoother and more refined. It’s sure to be a crowd pleaser.
2020.
X2 is a reimagined version of a mead of yesteryear called Mead X. Last made in 2018.
X2 features tart cherries from the Mediterranean, Black Currants from NY State, Blackberries from the Pacific Northwest blended with organic honey by way of Brazil and Orange Blossom honey before aging on oak and a blend of Madagascar and Tahitian vanilla beans.
We kept it wild with a mixed culture using both Saccharomyces and Non-Saccharomyces strains originating from France and New Zealand.
