Specter, our NE Style IPA has a number of very distinct traits that separate it from the rest of our IPAs. It’s smooth, creamy mouthfeel and it's hazy appearance are by-products of a number of ingredients and process. We used nearly 20% oats in the mash, a chloride-heavy water chemistry, and low flocculating yeast. We aggressively hopped Specter with late boil and whirlpool additions, leaving it with little perceived lingering bitterness, but rather a tropical and juicy finish. If that wasn't enough, we dry-hopped this beer twice with Citra, Mosaic, Amarillo, and Nelson Sauvin to add aromas of citrus and stone fruits. Read Less

If left outside during winter, it won't freeze, even in Minnesota. Beneath the shadowy exterior, a swirling ambush of coffee and dark chocolate flavors lurk atop a mountain of malt. Fulton War and Peace is a Russian Imperial Stout conditioned with whole bean Peace Coffee in the fermentation tank. It's an epic work of beer, but unlike the novel, this beer is brief and fleeting, appearing just once a year in February. Historic quantities of chocolate malt and roast barley clash over a field of dark roast Peace Coffee beans. Like Tolstoy's masterpiece, it may take some time to finish and require some thought along the way. But by the end, we think you'll find yourself better for the effort. Read Less

Insurrection's flavor profile is spearheaded by Nelson Sauvin and Mosaic hops added at a rate of over 3 pounds per barrel. Both hops are new breeds that overwhelm the senses with an onslaught of citrus, sauvignon blanc, and blueberry notes. Loads of 2-row barley and a touch of honey malt combine to form a serious malt backbone and an ABV of 9%. Read Less

Unlike most saisons, however, The Expat is brewed with a substantial percentage of rye in the mash and is filtered prior to packaging. The result is a crisp, effervescent saison that is true in spirit to the style’s heritage of fusing refreshment with a bold, spicy farmhouse character. It’s a great beer to enjoy on its own in the late afternoon, but may even be better when paired with a meal. Read Less

72 Stretch is a clean fermented Gose style ale. The malt bill is comprised of pilsner malt and 35% wheat with a touch of Acidulated and Munich malts. We utilize Herkules, Perle, & Summer hops to create a gentle bitterness and pleasant hop aroma. We also add Mediterranean Sea salt & coriander to the kettle to create the classic Gose characteristics. We ferment the beer with a clean ale strain and then dry-hop the beer with lemon & lime zest.
