This Imperial Stout was aged for 3.5 months in a Balcones Distillery Whisky Barrel out of Waco, Texas.

Notes of whiskey, oak, vanilla, chocolate/coffee and perhaps a little maple, among other things. Because the barrel is small (5-gallon), it takes far less time compared to breweries filling full barrels. Aging takes place much quicker, offering the same benefits in a fraction of the time due to increased surface area compared to the beer volume inside.

An English style yeast strain was used to offer lower attenuation for a heavier, fuller mouthfeel. Residual sugars are balanced by a firm bittering of Nugget hops.

Beware the Moon is a traditional English style Porter. No vanilla, no coffee, no lactose or anything else aside from water, hops, barley and yeast!

Starts off with nearly 70% of Fawcett Pearl Malt from the UK, accentuated with other continental crystal and roast malts. Hopped with Nugget and finished with a healthy dose of the wonderful earthy East Kent Goldings and fermented with an English Ale yeast strain.

S.M.U.T. – The new kettle sour series that will become a new staple in rotation at Grave! The S.M.U.T. name will just denote the beer as a sour - With its style, fruit additions or other attributes ever changing.

The first in the series will be Red Raspberry S.M.U.T. This delicate Berliner Weiss was soured with lactobacillus to provide a very clean, bright tartness to a very delicate grist of just Pilsner and White Wheat. Coming in at 3.4% ABV, this Berliner was conditioned on 3.5 lbs of organic red raspberries, providing a mild raspberry flavor and aroma along with a beautiful color!
