We wanted to create an easy drinking craft beer in the traditional North American pale ale style that has proved so popular with discerning beer drinkers — so we did, and then named it after a hairy Mongolian cow thing.

Fat Yak first impresses with its golden colour, distinctive, hop driven, fruity and herbaceous aromas, giving characteristic passionfruit and melon notes, followed by a hit of hop flavour at the finish. The taste is refreshingly clean on the palate.

Lazy Yak is an easy going Australian Pale Ale. The flavour of citrus and light passionfruit comes from the Citra and Nelson Sauvin Hops added late to the kettle. The use of the Yakima Valley Hop early gives us the easy drinking nature of this luscious beer that is balanced by the light bitterness and full sweet malt flavour.

Lazy Yak is based on an Australian Style Pale Ale, which is an easier drinking Pale Ale. With a fruity hop aroma driven by the use of Yakima Valley Hop, Citra and Nelson hops, it is a light, refreshing, easy drinking Pale Ale.

The fruity notes are derived from the Citra and Nelson Sauvin Hops. The early use of the American Yakima Valley Cascade Hops provides the easy drinking nature of this beer. The light bitterness is balanced by a subtle sweet malt flavour, which comes from 100% Australian pale malt.

As Matilda Bay was establishing the craft of specialty brewing in Western Australia, there was a similar phenomenon happening in the USA, particularly in the Northwest states of Washington and Oregon. Using locally grown Cascade hops, the region’s craft brewers developed a truly distinctive and unique beer style, the Northwest Pale Ale. Although based on traditional India Pale Ales, the Northwest style has its own unique character — one driven mostly by an assertive bitterness and a distinctive fruit and citrus aroma from the locally grown hops. Our version of this style has become an Australian classic, winning us many awards, not that we like to brag — well a little bit.

Alpha Pale Ale derives its name from the alpha acids in hops which, added early in the boil, impart a distinctive bitterness. Cascade and Amarillo hops are used to make this beer. Hops are added early and late in the boil and then dry hopped in late fermentation. They contribute a wonderfully complex fruit and citrus aroma. Pale malts round off this beer with a fuller malt character. Read Less

We’ve been keen to brew a cider for a while but took ages to get it just right. The first thing you notice about our cider is the first taste — like a bite from a ripe Granny Smith apple. The next is the colour, a deep dark almost dirty russet colour. Hence ‘Dirty Granny’ cider.

It has a full rich flavour combined with a perfect balance of sweetness and acidity, and the crisp bite of whole apples. There is a certain amount of astringency in the aftertaste. It is crafted carefully so as to retain as much flavour and palate length as possible while also maintaining the refreshment.

Our Owl is an original creation by the Sexton family – finding the equilibrium between an Australian Pale and a European Golden Ale. The Owl pours with a pale, slightly cloudy golden glow and creamy head. Aroma is malty and biscuity with underlying hints of stone fruits and dusted with fresh hop spices.
