Doppelbock is the quintessential strong German Lager. It delivers plenty of grain derived complexity; candied fig, caramelized molasses, dark toasted bread. But what makes Doppelbock so special is - in true lager fashion - it finishes surprisingly dry and clean.

This is a traditional German recipe. We used 100% German ingredients and performed the old-school German mashing regimen; decoction. This big beer took three months to ferment and lager in our cellar. We took no shortcuts in bringing this iconic beer style to Central Illinois. Read Less

Double IPL is not a balanced beer. It is high in alcohol and is extremely bitter. It has a powerful citrus and passion fruit aroma that comes from the reckless amount of exotic hops that we dumped into the fermentation tank

Although the inspiration for this beer was the West Coast Imperial IPA, we couldn't help ourselves from putting our own spin on this style. Instead of adding sugar to the boil kettle to help dry out the beer's finish, we used a hearty dose of whole kernel corn from our farm. Instead of using the typical American Ale yeast strain, we used our house German Lager yeast

We used a large dose of custom roasted Riggs-grown malted wheat to showcase a fresh roast character that commercially sourced grains simply can't deliver. For all of its upfront complexity, our use of Riggs-grown Corn and German Lager Yeast does its usual trick; this beer is dangerously drinkable. Red IPL was heavily dry hopped with Mosaic and Cascade. It has a well defined aroma of citrus and blueberries. It has an assertive bitterness that is the hallmark of west coast style IPAs. Due to our use of corn, the beer is light bodied and has a dry finish. Although the beer's finish is dry, it isn't totally neutral. The best way that we can describe the finish of this beer is that it's a bit like drinking freshly squeezed grapefruit juice. Red IPL has a citric acidity that's unlike any beer we've ever put our name on. Read Less

Dunkel Lagers originate from Munich, where they've been brewed for over 900 years. They are possibly the best example of a beer style that showcases a single ingredient, in this case: Munich Barley Malt. The hops and yeast definitely play minor supporting roles in this beer.

While some modern examples of Dunkel use roasted or caramel malts, we brewed ours exclusively with Munich Malt. Subtle aromas of freshly toasted bread give way to a rich malt flavor and a characteristically balanced, lager finish.

In order to achieve the deeply layered, yet incredibly clean malt depth that the style is known for, we employed a double-decoction mash for this beer. As with all Riggs Lagers, we gave this beer the traditional German Lager treatment: precise dosing of fresh lager yeast along with a very slow and cold fermentation schedule.

And just like all other Riggs Beers, our Dunkel Lager was brewed exclusively with grain, water, hops, and yeast. Our beers are never filtered, clarified, pasteurized, or dosed with any type of process aid.

6-Row Pils is a beer born from two of our favorite things: lager beer and local ingredients. This pale lager is brewed with a blend of Riggs-grown 6-Row barley and whole kernel Riggs-grown White Corn. These traditional American brewing grains give 6-Row Pils its distinctive, yet balanced, flavor.

We sourced all of the hops for this beer from our friends at Hallowed Hops Farm in Lewistown, Illinois. A sizable charge of Illinois-grown Chinook hops early in the boil gives this beer a substantial bitterness (which is appropriate for a pilsner style beer). Illinois-grown Crystal hops lend hints of lemongrass that play nicely with faint hints of grain.

6-Row Pils is the ideal beer for someone who is looking for a fun, hyper-local, take on a traditional lager. Read Less
