While it’s one of the most popular ‘specialty’ styles in many beer nations, the IPA is still finding its feet in Belgium.

We want to help it along the way.

We’ve married the British tradition of a more amber, caramelised malt profile with the seductive quality of American hop varieties from the Yakima Valley (Amarillo, Cascade and Citra).

We’ve selected a clean yeast strain to allow those American hops to sing.

Damme Nation showcases an intense hop flavour and an even more intense hop aroma, with a pronounced bitterness which delivers a pleasant and long-lasting aftertaste and a balance of which we hope the Belgian brewing tradition would be proud. Read Less

Cassandra is a complex and full-flavoured beer. Its bitterness derives from both its coffee-like roasted grains as well as its earthy European hop bill and a full-bodiedness achieved through the addition of oyster shells at the end of the boiling process brings out a perceived chocolatey-liquorice sweetness.

The shells are taken from the Siphon restaurant where the oysters have been freshly prepared and consumed by visitors earlier on brew day.

We wanted a stout in Belgium to be roasty and malt forward, where the yeast doesn't do all the heavy lifting. We wanted a stout in Belgium which wasn’t overly sweet.

We wanted a beer versatile enough for food pairing in the Siphon restaurant. And we've got an Irish brewer who wanted a stout. Read Less

Vanilla Orange Quad. Using dark candi sugar to boost gravity, thin the body and darken the colour and a distinctive yeast strain, which presents as ripe banana to dried fruits and pepper, we’ve built a classic Quadrupel first – albeit slightly drier and with less phenolic spice than other commercial examples – and added an extra layer of ingredients to give the beer a winter twist.

Instead of additions in the boil, we added orange zest and vanilla pods after fermentation, one week before bottling in our cold conditioning tanks.

The tanginess of the orange zest and the smoothness of the vanilla add complexity and seasonality, and deliver a flavour evolution in the bottle over time. Read Less

Our spring seasonal (a honey lavender tripel of 8,5% ABV) is named for the year the Siphon restaurant opened, frequented initially by fishermen who spent their days—not angling the rivers—but inside the Siphon, drinking beer.

The beer is a classic Belgian style—a golden Tripel of 8,5% ABV—but with our own individual stamp. The addition of honey accentuates the rich nectar-like maltiness of the beer, and the distinct aromas of the lavender compliment both the floral, earthy German hop profile and the banana-esque, apricot yeast flavours.

1902 is a beer to celebrate the rich history and continuing culinary excellence of the Siphon restaurant. The visual identity of the beer is the “monnikenrede” symbol which appears on every plate and every cup in the restaurant, a nod to the historic village which existed at the site of the Siphon in the 1600s where religious groups would welcome eel fishermen should they need somewhere to stay. Smoked eel has long been a specialty of the Siphon restaurant. The eels are smoked in a hut beside the brewery. We huddle around the ashes on Autumn brew days.

Cendre is Black India Saison. It’s a blend of styles from a variety of countries, with the dark malt character of a British stout, the seductive fruity profile of an American IPA and the drying citrus qualities of a Belgian Saison.

Its flavours jump about across a wide spectrum: combining the chocolatey notes of our Munich, Special B and Chocolate malts; the piney, resinous, melon-like hop notes of Citra; and the zesty attenuation of a Saison yeast.

It’s a beer brewed by a Flemish brewery, but named in French. It's not intended to be confusing, but rather a statement of who we are. Read Less

‘Zwaluw’ is a grassy, fruity and bitter rye session ale with rye malt (15%) delivering a body to defy it’s low ABV and a heavy dosing of Amarillo in dry hop to equip it with a stone-fruit and citrus juiciness.

The beer is named after an iconic migratory bird that travels every year from Africa to the Zwin nature reserve on the Belgian-Dutch border, just 15 kilometres from our brewery: the Swallow.

It’s the iconic symbol of the arrival of summer, and is often referred to as the ‘bird of freedom’. Summer beer is low enough in alcohol to facilitate easy drinking, refreshing enough to quench a thirst in warmer weather and full-flavoured enough to accompany the joy of the season.

One swallow does not a summer make. So, drink two. Read Less

Blinker is made with modern ingredients and techniques, but we defer to the intention of the early Saison producers in the Henegouwen region of Belgium.

It’s made from grain which would have been available on those farms (barley and wheat) and from earthy and spicy European hop varieties (Challenger and Goldings) from the hop fields of Poperinge.

We achieve dryness by selecting a highly attenuating yeast strain which we believe ferments as deep as their ambient farmhouse yeasts might have done.

What we’re left with is an incredibly dry and thirst-quenching beer with a pronounced citrus fruitiness.

Lieve is a light gold, crisp and crushable beer of 4.5% ABV showcasing 100% pils malt. It's inspired by the top fermented but lagered hybrid beers produced around the German city of Cologne, but has a more pronounced ester profile and a firmer bitterness (Citra and Mandarina Bavaria). The Lieve was one of the oldest canals in Europe. From the star-shaped fortifications of Damme, it flowed to the historic city of Ghent. Its name translates as "dear" or "lovely". Read Less

EXCUSE ME WHILE I KISS CASSANDRA is an Imperial Oyster/Coffee Stout of 10,5% ABV. It is a collaboration brew between Siphon Brewing and Hedonis Brewery.

To create this viscous, creamy and boozy beer, we mashed ridiculously thick with a grain bill which included pale ale, munich, caramunich and chocolate malts as well as roasted barley and oat and barley flakes. And we didn’t sparge. At all. But we did add oyster shells and espresso to contribute even more body.

The first collab was in 2019, but the beer was brewed again in 2022, in a limited series of 1.000 bottles of 75cl. Read Less

Codex is a juicy Belgian blond ale of 6% ABV with a subtle fruity-spicy yeast complexity, a malty flavour and a dry finish. The generous whirlpool additions of Motueka hops from New Zealand equip the beer with a distinctive freshly crushed citrus and “Mojito” lime character, with background notes of tropical fruit.

Damme is an official “book city”. The modern codex format, where pages are bound to a spine, replaced the ancient scroll. You have to turn the page to continue your story. Read Less

The name NOLA is the female version of "Sint Arnoldus", the patron saint of Belgian brewers. To celebrate women, we create a new Nola once every year with different women in the beer industry.

Centurion is a “New England Saison”, our 100th brew produced to celebrate the second birthday of Siphon Brewing. We brewed the beer with our friends at Brouwerij ‘t Verzet, Brouwerij Hof ten Dormaal and with Armand Debelder using several aromatic new world and old world hop varieties including Ella, Hüll Melon, Amarillo, Citra and Mandarina Bavaria. Centurion marks both our international outlook and our respect for Belgian tradition. On a base of the soft, biscuity flavours of a relatively classic Saison malt bill (pils, munich, dark wheat, light wheat, oats), we’re combining the citrus qualities of our yeast strain with the tropical and stone fruit juiciness associated with the “New England” moniker, not to mention its low bitterness, late and dry hop additions in huge quantities and fruit juice hop haze. Brewed for the 1-year anniversary of Siphon Brewing together with Viven and Bryggja of the Belgian town of Damme, 'Stinker' - named for one of the canals running alongside the brewery - is a top fermented beer, brewed very much as a Belgian ale (multi-step mash and bottle conditioned), but using Beechwood Smoked Malt from Weyermann® Malts in Bamberg (35% of the grist bill) to equip it with its subtle smoked bacon aromas and flavours.

Munich, Caramunich and Chocolate malts give it body and roundness.

A clean fermentation profile and bittering additions only of Hallertau Mittelfrüh let the smoke and malt feature.

The cigar on the label references not only the smokiness, but also the celebratory nature of the occasion for which it was brewed. Read Less

Osschaert is a Smoked Rye IPA of 7% ABV brewed in collaboration with Klaas Dellaert and Liesbeth Van Raemdonck of Totem. The malt bill is 30% beechwood smoked malt, 30% rye malt and 40% pale ale malt and it's hopped with Columbus, Cascade and Chinook. It's a full-bodied beer with a grassy, subtly smoked flavour and resinous, tropical hop notes. Dellaert's grandfather comes from the region around our brewery and told stories of being chased by the Osschaert—a shapeshifting monster appearing mostly as a black dog with large claws and fiery eyes. The monster would attack drunk fishermen smugglers in the middle of the night, forcing them to their knees, its terrifying laugh ringing out across the waters. Read Less

An ode to all the big plans and hazy memories created in the little Bruges bear since Daisy Claeys opened the bar in 1983. This beer is brewed exclusively for 't Brugs Beertje on the occasion of the 35th anniversary of the bar. The large proportion of wheat malt and oats give us the hazy complexion celebrated in the name of the beer (the rest is pils malt and sugar). Its hopped with Brambling Cross and Saaz and fermented with an English Ale yeast which presents as a mix between a wheat beer, a Belgian Tripel, and an English bitter. It showcases a 100% pils malt base, Citra and Mandarina Bavaria hops and a subtle fruity yeast character. Its name (Siphonneur) mirrors the name of the Brussels café for whom it was first brewed as a third birthday gift (Barboteur) and suggests it is suited to someone who likes to ‘siphon’ beer from their glass into their mouth at a noticeably frequent pace.
