Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!

Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You’ll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures. Read Less

For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it.
The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings. Read Less

Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
The soft, mildly sour berry taste, harmonises with the oak barrels’ aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime. Read Less

Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Again, the basic old and young lambic are matured in oak casks. But here we add to one year-old lambic about 400 grams of real cherries per litre. This creates a second fermentation in the casks. Oude Kriek Boon then undergoes a further fermentation in the bottle and has an alcohol volume of 6.5%. After several months, the flavour has matured to the desired taste.
Oude Kriek Boon is a test of your patience. It should lie about 2 years in the bottle. At first, it tastes of fruit, especially sour cherries. Oude Kriek Boon eventually evolves into a deep taste reminiscent of Port or Madeira wine. This is kriek at its best. Read Less

Kriek Boon Mariage Parfait consists of 1 year-old heavy lambic flavoured with overripe cherries, 400 grams per litre. Longer aging in small oak barrels gives it its special flavour. The lambic is bottled and stored in an air-conditioned room for six months of secondary fermentation. Kriek Mariage Parfait has an alcohol volume of 8%. It keeps for a minimum 20 years, and is ready to drink after about 2 years in the bottle. This is perfection in kriek beers. Try it and admit that it surpasses the best wine.
The casks give this beer its fine oaky flavour with hints of vanilla and cloves. It boasts a wide mouth with a warm body and roundness reminiscent of dried cherries and wild tastes. This is soft mildness personified. Read Less

To create Geuze on draft, Brewery Boon had to take the innovative steps to alter the formula creating a new lambic blend. They defined the characteristics of the lambic needed for the kegged Geuze targeting lambic from specific foeders which were best suited to the new specifications. This solution provides a way to keep keg pressure down and still produce a “keg conditioned” Geuze with a full-bodied taste and signature Geuze Boon sour fruitiness. This new formula presents a taste different to that of the bottled Geuze with less carbonation and a different mouth-feel experience. Read Less

You may or may not have seen this recently; either way I'd still like to let you know there's a new Oude Geuze we've made with Mikkeller!

In this case this geuze is more of a wink and nudge towards the american tries/experiments of our beloved lambic. These tries, resulting in interesting and nice bottles of beer, but also very often resulting in beers that we find to tend more towards malt vinegar, seem to be liked by a lot of people even with the enormously high acetic acidity, and mostly by Americans. When we made a more acetic Oude Geuze (the VAT 108) to put in our Discovery Box, many people loved it, but it seems many Americans still found it not sour enough.

But no, we didn't decide to make something even more sour. We care what Belgians like to drink, we will listen to the Belgian taste pallet, so we DON'T want to make malt vinegar. No one wants to drink salad dressing.. (in Belgium at least). On the other hand this reminded us of an old habit that some producers of Champagne had. Batches that turned out more sour were labeled "Goût Americain" (American Taste) and some also were marked "Goût Russe" etc. and were then sold in those markets. With all this, we had an idea to make a beer, not necessarily to be sour, but more to put into perspective the appreciations of certain tastes. And this is a topic we've talked about with Mikkeller many times before which is how this became the basis for a new collab.

To us acetic sting (as we like to call it; "piqûre acétique" in French) is an off-flavour. But it seems it is an acquired taste for other people (in this case more so the American part of the world). So don't expect enormous amounts of sour because of course we're not going to let anything leave the brewery that we don't like ourselves. But what you taste is a nice complex, balanced Oude Geuze with acetic acidty that is already way above the level we normally prefer and what we'd easily at our brewery unofficially label as "american taste". At the same time it's still relatively mild compared to other beers, but it is only to show that we don't believe acetic acidty should have such a huge role in these beers. It is nice to add a small barrel with "neig" (lambic with acetic sting) to a large blend to give some depth (a bit like using salt and pepper in the kitchen). But it should not be a dominating taste in the beer. All the stories of irregular bowel movements and the enamel of teeth coming off is not what a properly made lambic beer should have as result.

A "mono- blend" of which 90 % consists of Lambic from cask No. 79 (brewed on 19-20 October 2011) and 10% young Lambic. The beer has been bottled on December 17, 2014. Cask 79 has a special story. Indeed, it is the oldest cask of the brewery. It has a capacity of 6700 liters and was made by the Persenaire firm in Antwerp in 1883. For a vessel of this size should have been quickly used oak for at least 200 years before, which means that the wood for these vessels is over 300 years old. The attenuation is 93%, so this golden Gueuze is not quite dry. With its 9% ABV it does have a very full-bodied, with aromas of ripe apples, vanilla, notes of oak, peach and nutmeg. Oude Geuze Boon is undoubtedly one of the best-known beers of our brewery. We have been making this traditional, unsweetened and unfiltered Oude Geuze since 1975. It is particularly loved for its gentle flavour and mild tartness. Its secret? Everything starts with the Lambic beer that is brewed from 60% malt and 40% wheat and is then 100% matured in oak barrels.

Oude Geuze Boon is a blend of Lambics that have matured for 1, 2 and 3 years. It is bottled and then given another several months of bottle conditioning. This secondary fermentation process creates extra complex flavours with a rich sparkle that produces a nice head when served. The bottle conditioning is also what makes the Lambic blend a genuine Oude Geuze. Read Less
