We swap our the crystal malt for some vienna, and then after fermentations we add an insane amount of Citra for a Double Dry-hop. The result? A hop monster with a whole lotta citrus aroma up in yo face! This beer is a real crowd pleaser because of its up front fruitiness, and restrained bitterness. Named for Rob’s dog, the White alludes to our use of 50% wheat instead of barley in this beer. Aside from that though, this beer has very little in common with what most people consider a “wheat” beer. The wheat in the malt bill gives the beer a lighter texture and mouthfeel, and helps to accentuate the bright citrus characters of the fruity West Coast and New Zealand hops we use. The result is an IPA that Hop Heads will love, but that is immediately approachable for most people. Read Less

This beer may have a bit more body and texture than some West Coast IPA’s.. but we sure do make up for it by adding as many fruity aroma hops as is responsible. (or maybe just a bit more)

We teamed up with a San Diego favorite of ours – Pizza Port, for a Day One of epic preportions. When we first talked we wanted the label to be an homage to Thrilla the Gorilla – whom many of you may remember from T&C Surf designs. We were even more excited when we reached out to Thrilla’s creator, Steve Nazar and he offered to create a brand new character for us. And with “The Chicken” being such a big thing in San Diego, Surfin’ Bird was born.

This Double IPA is based on a hop cocktail we are really in love with (we brewed a test batch in San Clemente), Citra, Loral, and Idaho 7. It’s all lemon cream, stone fruit, and some tropical stuff going on with a light undercurrent of dankness. Read Less

First impressions of our Standard Crude Imperial Stout right out of the brite tank on December 17th. Nicely carbonated with a lasting tan head that measures a finger or two. Nose to glass revels toasty characteristics with some single origin coffee notes coupled with blackberries. The taste is a real reversal when compared to our Hyperion Double Stout...toasty flavors up front with dark chocolate notes in the back. I get a bit of that 10.3% as well...not overwhelming though...just a little extra warmth...a nice touch for the cooler weather. And the mouthfeel has some weight to it but it also has a fantastic velvety quality as well. Read Less
