The simple malt bill gives an ABV of 5.8% which carries the flavour and really allows the hops to shine through.

The hops used are of American origin, Colombus, El Dorado and Cascade (45 IBU). With multiple generous additions in the kettle and further dry hopped before it reaches you as fresh as it can be.

Taste as the aroma, great background of sweet fruits, mango, tropical notes, juicy citrus, resinous hops, good bitter sweet balance, complex flavour, so drinkable for the abv, cracking stuff. We're always looking at ways we can improve our recipes and believe craft beer should always be treated as an evolving art where new innovations and tastes give us the opportunity to refine our recipes. We've been discussing the current trends in 'session beers' and feel our Althea recipe needed a little update to bring it in line with current trends in the beer world. We've chosen a new juicier yeast strain that gives more body and a bigger tropical aroma. We've also given the malt recipe a complete overhaul to give a fluffier, lighter base. We've left the hops relatively the same but have swapped out Chinook in the dry hop for modern Idaho7 with it's tangerine flavours complimenting Amarillo really well.

This March we dove into our recipe notebooks looking for ideas to inspire the ultimate session-able stout recipe. Here is Ostara Stout our take on the concept of 'Dublin Stout'. Brewed to be complex but quaffable. We took some of our imperial stout tricks and adapted them to a lower ABV base recipe. Back in Feb 2020 we brewed four of the largest mashes ever at Galway Bay to collect one full tank of super-high gravity wort. This all-malt 33 Plato stout Is the biggest beer we’ve made to date. Lagered in a steel tank for 1 year before aging in Bourbon & Rum barrels for an additional 9 months. This decadent stout oozes chocolate, cocoa & finished with a kiss of salted caramel. We still got it! This 3 year rum barrel aged imperial stout was brewed in the spring of 2018with one of our best friends Chris Treanor, who left Galway Bay Brewery in 2016 to join White Frontier in Switzerland. This classic imperial stout was brewed with 10 malts to 24 Plato OG, then racked to rum barrels and aged for 3 years where it gained an extra 3.8% from the barrel maturation. The taste has layers of chocolate and caramel on a delicate frame, with notes of dusty cocoa, a pleasing rum spice and some booze warmth on the finish. Brewed by friends to share with friends. This triple mashed Imperial Stout spent three months in steel before being infused with thoughtful amounts of Madagascan Vanilla beans & tonka beans which add layers of decadent milk chocolate & vanilla to this luscious imperial stout. This beer was then aged for a further 9 months in select Bourbon Barrels. In April 2018 we brewed a double mash Barleywine wort which was boiled for several hours, fermented long & cool before being aged in select Bourbon & Vermouth casks.
