Maker of Things is our American take on a Belgian Flanders style red ale: Malty, sour, and fruity, with a nice funk complexity. This beer ages in a continuous, one-vessel “solera” process, souring in our 930 gallon American oak foeder made by Foeder Crafters. When Maker is mature, we pull off a portion of it (ususally a third), and refill the foeder with freshly fermented red base. Only every few years or so will we quickly empty the foeder, rinse it out to get rid of any excess yeast buildup, and then refill it with the same beer.

Maker of things is bottle conditioned for at least two months before release, and each bottling will be slightly different, as the base recipe changes ever so slightly, and the average age of be the beer in the foeder becomes older and older. Cool! Read Less

We age our lightly spiced "Farmhouse biere de garde" in red wine barrels for 3-6 months with wild yeasts and bacteria, where it picks up some sourness, wine/oak character, and some "barnyard funk". It's then bottle conditioned for at least two months before releasing. This beer picked up a Gold Medal at the 2016 World Beer Cup for Belgian and French Style Ale.

Wine barrel-aged sour ale with Ohio black raspberries.

Learn’d Astronomer has always been a wine-barrel aged sour ale fermented on raspberries, but this batch (the fourth), represents the first time we have been able to do that with entirely Ohio-grown fruit. Most of the raspberries were black raspberries, grown by Stokes Farm, in the Cincinatti area. These berries are extremely special; the fruit intensity that they lend to beer is unparalleled.

This blend of wine barrel aged sour ale, mostly blonde, some red, has an average age of 2.5 years. It was refermented on over 2 pounds per gallon of fruit for over 2 months, then naturally and bottle & keg conditioned.

Quick-sour wheat ale with apricot & spices.

Our “Reinheitsgewhat!?” series of sour ales is our equivalent to the ubiquitous “kettle sour”. We don’t sour these beers in the kettle, rather, we use a type of wild-isolated yeast called Lachancea to quickly ferment and produce lactic acid in 2-3 weeks. Much quicker than mixed-fermentation souring, but definitely less complex. Still, it makes a great beer, especially as a base for fruiting and spicing.

Apricot Reinheitsgewhat!? is mashed with Haus Malts pale and wheat malt, boiled with just a smidge of hops, and lightly spiced with coriander, chamomile, and grains of paradise. After a primary fermentation (during which the sourness develops) we add generous amount of apricot puree, and the yeast ferments that too. It’s a really great “entry-level” sour beer, or everyday drinker, if you will.

Flavor Profile: Moderate on the sourness spectrum. Very light malt, fresh apricot, light floral herbs, almost no bitterness. Crisp finish.
