Our Second attempt at making a sour beer, Oh Snap! is a kettle soured Red ale. The malt bill is reminiscent of a Flanders Red Ale but we don't have the microbiological complexity or wood aging necessary for that style.

We actually put in a quart of Strauss non-fat Greek yogurt to the kettle before the boil and left it for the the weekend. Monday morning we boiled it to sterilize it and fermented as normal.

Cerveza Maldita translates to Cursed Beer. Reminiscent of a Mexican hot chocolate, this beer is of an Irish Stout base with 20 pounds of Cocoa nibs added. During its "Dry hop" stage we added one and a half pounds of cinnamon, a pound of gurajio chilis and 11 vanilla beans. Gurajio chilis give a chili flavor with out a chili heat.
