Bare Necessities

This sour beer, named by our bartenders, pours a striking dark pinkish red from the addition of prickly pear, a red cactus fruit, and raspberries, combining for over a pound per gallon. The unmistakable aroma of the prickly pear “pairs” well with the raspberry, bringing a bit of a green, leafy quality as well as what we’d describe as strawberry Fruit Roll-Ups. The traditional Gose additions of salt and coriander brighten up the base, and a grain bill of more wheat than barley also yields a creamy, fuller bodied texture. Sound good?
