Has the funk of wild bacteria without being overwhelmingly yeasty or sour, and a sweet tannic flavor like tea, how do they do it?

Yes it's funky. Light sour and grain flavors. Don't love it because there wasn't much to balance the funk

I thought it was a Gose; happy it’s not. It was a wild blend of wonderfully fermented ales. Happy to taste

It's more bitter than expected, however has an interesting lemon peel character along with some mild funk. It's not quite a lambic but there's potential here.

Excellent. A really top quality American sour. Impressive success with genuine spontaneous fermentation in San Diego. Peppery, fruity, crisp and complex. A winner.
