Funk!! This has loads of bitter, piney hoppiness to it. Pineapple and stone fruits. It’s punchy and full of flavour! But of grapefruit as well. Very complex!

Third. New local-ish (not sure where exactly) brewery who look like they're doing interesting stuff. And, judging by this, doing it well. Saison / West Coast IPA cross? Funky and hoppy, anyway. Pub tasting notes say apricot and vanilla; I get strawberry.

Local brewery, new to me, making wild ales! I am very excited*. Tart and very funky in a rather saisony way; I'm getting apricot and oak but not the vanilla the Hope's festival description is raving about. *So much so that I initially wrote 'exciting'.

Terra Tempo Brewing: Interesting. I definitely feel the flavours of oak aging need a re definition. If this was fermented in steel would be very different.
Terra Tempo Brewing: Looking at oak as a vessel for giving wild funky flavours rather than the classic BA characteristics.

Belgian yeast flavours quite bitter on the finish and floral notes on the front. A classic saison.

Simon Whitehead: Do you use a Belgian yeast strain or have you developed your own English one. My local had two more of your saisons I’ve yet to try.
Terra Tempo Brewing: Hi I do not use a Belgian yeast strain I use a very small amount of an English strain then ferment the beer open (coolship) for a week
Terra Tempo Brewing: The esters and phenols you are referring to have occurred naturally on those beers other brews don’t have those characteristics.
