Czech Dark Lager

This iteration received the full-on double decoction method, whereby portions of the mash are boiled separately in an effort to draw out even more malt character that while difficult to quantify, we get excited about, and these days, that’s more than enough reason to do it. Also, for the first time ever we asked our friends @epiphanycraftmalt to provide us with some of their under-modified pilsner malt, which we took full advantage by way of the aforementioned decoction process we employ for malt depth.

Slowly fermented, and naturally carbonated by capturing as much residual co2 as possible via the magic that is spunding, we notice impressions of cold brew coffee, manuka honey, pumpernickel bread, caramel tones, and dark fruit almost smoke forward feel for what easily could be the ultimate autumn into winter beer.
