Best Laid Plans

The very first commercial brew of our core range porter, Moll's Medicine, was fraught with a number of mishaps and technical problems which resulted in two things; a very tired and exasperated brewer, and a batch of porter that, while pleasant and perfectly drinkable, was not quite Moll's Medicine as it should be. No-one likes to waste beer, so rather than throw this batch away, we decided to move our plans for a barrel-ageing programme forward, and procured some Scotch whisky barrels for our accidental porter to spend a few months in. We then brewed an imperial red ale, strong, dry and with plenty of berry fruit character, with 10kg of whole raspberries and heaps of fresh thyme added to the boil. When fermentation of the red ale was complete, we blended one barrel of porter back into it, turning a brew we were initially unhappy with into arguably our most experimental beer yet.
