Before the large breweries came to prominence in the 19th century, many county houses and estates brewed beer for the land owners and their workers. Strong stock ales were brewed during the autumn and laid down in wood to mature. These beers would have used local ingredients and would have almost certainly been assisted in their aging by the Brettanomyces (wild yeast) that reside in the wood. Our recreation is made with our own well water, Organic Suffolk barley, English Organic Goldings hops and aged in wood with a mixed culture of wild yeasts and bacteria. We have used large quantities of whole hops to act as an antiseptic and brewed the beer at the start of the colder British months to give the wild yeast an advantage, just as the brewers did 200 years ago. A heady aroma of sweet malts, floral hops and funk is followed by a complex yet drinkable flavour of bitter grassy hops, slight candy sugar and earthy musty yeast.
10.5%ABV 330ml. Brewed 13/11/16. Bottled 10/6/16. 60IBU FG1006

While the name might give the impression the beer was possibly a mistake, or folly, the name actually originates from a road that runs near to the brewery of the same name. We used a new to us yeast in this batch, Saccharomyces Kudriavzevii, which is isolated from the bark of oak trees, alongside our own mixed culture to enhance the woody characteristics along with a stronger bitterness not often found in our beers due to the use of more of our locally grown hops. The beer was then aged for 5 months in a second use Rioja cask to round it out.

Every September the hedgerows surrounding the brewery burst with wild hops & a variety of wild fruits and berries. This year we took 4 barrels of sour saison and aged them separately on different fruits to be blended before packaging. First with plums, then damsons, then elderberries and the final barrel with wild hops. They were then blended together before bottling to create a rosy pink deliciously tart sour saison with a sharp fruitiness, rounded off by the earthy tones of the wild hops! Read Less

Fiery, yet refreshing, ginger has been used in brewing beverages since the mid 1700’s in Victorian Britain. The word Zingiber comes from the Latin word for the root spice. Zingiber was initially fermented with Belgian Abbey yeast with organic dried ginger added to a barrel along with our mixed culture. After 5 months, we decided it needed a bit more of a punch so we added 2kg of cubed fresh organic ginger a few weeks before bottling to impart a light, natural zing which balances quite nicely with the dry finish. We've always had a fascination with Flanders Red style beers & their links to brewing in the UK. We also love them - sour, but with a rounded sweetness; complex, but effortlessly drinkable.
Our fourth blend contains four different barrels with the oldest dating from November 2018 & the newest brewed September 2020. The older barrel brings more wood character to the blend, along with a touch of welcomed acetic while the newer barrels add a cleaner, crisp acidity. They combine to create a balanced sour red ale with light balsamic & cherry fruit undertones. A delight to pair with punchy cheeses & charcuterie. Read Less

ABV varies. India Pale Ale has been a misused term, with this beer we have tried to recreate an original IPA . We have taken the historical premise that IPA would, 200 years ago, have used only local organic ingredients. It would not only have had to ‘keep well’ but to improve with keeping, even in a hot climate. To achieve this, we've introduced a wild yeast culture derived from the local environment and produced wort using Suffolk well water, Suffolk grown organic barley (pale malt) and finally hopped heavily with English organic Goldings (70IBU). The beer is then aged for 4 months in organic whisky barrels. The result is close to what would have quenched the thirst of East India Company’s hierarchy in the 1820’s and the Raj later on. This beer had a large amount of Nelson Sauvin added to the end of the boil and then spent 14 months in oak before being dry hopped with UK Endeavour hops and packaged. The Endeavour add a citrus, spice and black pepper element that compliment the funky brett and gooseberry bitterness of the Nelson. Read Less

Back in 2019, we decided to experiment with British made fruit purees to slightly deviate from our usual foraging/locally sourcing of whole fruit. You may have tried our Blueberry Sour or Blackcurrant & Rye Sours released earlier in 2021. While we used a substantial amount of puree in each of those beers, we still found we had some remaining. We decided to take a barrel we had been ageing to potentially use in our Stupid Sexy Suffolk Blend, add the purees and see where it went! The base of our own malted barley with a touch of rye malt for a light spice picks up on the fruity tannins with the oak coming through. Light acetic complexities further push the fruit to the fore. Brewed in June 2020 and aged in a single port barrel for 20 months. Lauen is a mixed fermentation sour beer mage with organic barley and wheat as well as a whole bale of hay added to the mash tun. The hay and a proportion of the barley were grown on Shimpling Park Farm, an organic farm that sits in and around the historic village of Lavenham. Lauen was the name for Lavenhem recorded in the Domesday book. Read Less
