A 9.1% Tettnang pale ale. This special beer is the stronger, richer partner of Ad Infinitum. As with all our beers, it’s open fermented with our house Saccharomyces culture before a longer, slower fermentation in oak with house Brettanomyces and dry hops.

Billowing foam sits on a beer of Orval orange. The aroma offers hugely complex fermentation character: ripe apricot, persimmons, quince jelly, pears stewed in muscat and subtly perfumed Brettanomyces character. The palate has the full bodied but dry elegance of a good Belgian Tripel but with a rich, expansive bitterness in the finish.

Brewed with Maris Otter malt, Brook House Goldings and Yakima Chief Centennial. The goal was to accent the refined bitterness and depth of Goldings with delicate, fruity top notes from Centennial. This meant that Goldings dominated the boil additions whereas Centennial was the large part of the dry hop.

The colour is beautifully gold and pours with lashings of lashings of tight, white foam. On the nose, tilled earth, Keralan pepper, heather honey and fresh lilies. There are leatherous vapours of fermentation, pink grapefruit and ripe pineapple drawn from the Centennial. On the palate it is dry and full, with a final and lingering rush of Goldings in the finish. Read Less

Brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges.

It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation. Read Less

Strong ale fermented in Sauternes casks. The Golden Net draws inspiration from the pale, dry stock Scotch ales of the 19th Century. It was brewed with single origin Scottish malt from @craftymaltsters and hopped with whole cones of East Kent Goldings in the boil.
It was then fermented warm in our open fermenters, to encourage maximum fruity esters, before a slow, secondary fermentation in Sauternes casks with more East Kent Goldings and our house Brettanomyces strains. When matured, it was blended with fresh beer and allowed to referment in bottles and kegs. Read Less

A 3.8% Saaz table beer. In the 1800’s, funky, hoppy table beers were a very Scottish thing, and Saaz was a favourite variety of the producers who made them. Siphonaptera draws inspiration from this tradition.

It is pale in colour and fluffy in foam. On the nose, there are notes of overripe lemon tea, honeysuckle, beeswax and violets. On the palate, it is airily light with a clean, snappy bitterness. Just the ticket for unreasonably hot weather.

The name is a reference to a poem by the great logician, Augustus de Morgan, about an infinite regress of increasingly small fleas. He used it to illustrate the idea that every particle in the universe might be made up of smaller particles, and so on, all the way down. Read Less

Squarer of Circles is brewed with Scotch Common, a very old landrace Scottish barley used in beer and whisky production between the late 17th and early 19th Centuries. It was grown and malted by Crafty Maltsters in Fife and possesses a subtly honeyish spicy sweetness. It’s also hopped with UK Cascade and Bramling Cross from Brook House Hops in Herefordshire. Open fermentation with house Saccharomyces was followed by wood fermentation with Brettanomyces and finally bottle fermentation with both. So much character for such a little beer. Read Less

6% Scottish stock pale ale hopped with Idaho 7 and aged Motueka

This splendid pale was the result of us acquiring some 2014 (!) Motueka hops. Whilst most modern pale ales are built on the freshest of hops, aged hops have fascinating qualities too.

As they age, certain compounds are produced (oxidised fatty acids, for those taking notes!) which can be transformed by fermentation into the ripest of tropical fruit aromas. It's even been suggested by those in the know that a NEIPA might benefit from a little whirlpool dose of the well-aged stuff.

Brettanomyces kicks this up a notch, turning aged hop character into deep funks and ethereal fruit baskets. This is why lambic is so heavily hopped with well-aged cones.

Epochal was therefore the perfect home for these ancient Motuekas. We blended the aged hops with unaged Idaho 7 for complimentary freshness and fermented with our usual complex processes to draw forth the best from these ingredients.

After much maturation, the result is one of our finest pales to date. Latherous foam yields bruised pineapple, burst plum, candied lime peel, leather-bound books and dried roses. The pale is dry, ripping with fresh bitterness and crackling with refreshment. An immensely complex yet approachable stock beer. Read Less

5.5% Smoked Scottish stock beer hopped with Challenger

Pale, hoppy, highly carbonated, zippy, dry and bitter smoked beers are quite a thing, and in fact have a long tradition in Polish Grodziskie. The flavours of smoke are also, of course, very prevalent in Scottish food and drink and so I'm delighted to present an Epochal take on the pale, hoppy, oak-smoked beverage.

This beer was brewed with a blend of Scottish malted barley and German oak smoked wheat malt and hopped with absolutely lashings of whole leaf Herefordshire Challenger, a bright and aromatic hop.

After open fermentation and cleansing, it was dry hopped in oak casks with more Challenger and allowed to ripen. Read Less
