Chris Knecht: Not gonna ding the score of my homebrew for this, but I must've miscalculated my corn sugar addition --- two bottles have both been *very* overcarbonated so far. Doesn't hurt the finished product, but requires careful attention upon opening.

Pronounced flavors of malt with notes of caramel. Subtle influence of hops. Rich brown color. Very nice autumn beer like an English brown ale.

This beer is spot on. Smell is saison exactly. Clean, crisp, very drinkable.

Toffee quickly gives way to caramely malt character. There's enough floral hop bitterness to to feel like the beer's overwhelming maltiness is held in check, though the caramel note comes right back again in the finish.

Shaun Adams: Chris K. Can burp the caps? I did it with a batch & it saved it. Just barely lift enough to hear a hiss & should basically still be sealed when you release pressure (or can re-press them if paranoid)

Still tasting (and looking) solid, though the hop character has certainly started to tail off. Rounding up the rating a little since this has some age on it... Still think this recipe was a winner.

The nose is phenomenal: lime, pinot grigio, and melon all coming through in brilliant fashion. The taste of the beer falls a bit flat --- the hops are pretty muted (especially compared to the nose) while the malt bill is smooth and lightly bready.

Earned the Haze for Days (Level 29) badge!Chris Knecht: My rating is favoring the caliber of the nose, which I'm very happy with. Next time I'd do a little more boil additions.
Shaun Adams: Chris K. That feeling when you nail an aspect of a homebrew tho.

Chris Knecht is drinking a Loral by Wolf's Head Brewing at Wolf's Head Brewpub
It's a solid enough beer: the Loral hops give it a nice lemony zing and the beer is cleanly made and free of off flavors. It just didn't quite ferment enough, so it lacks the crispness I was really hoping to pair with this hop bill.

It's started to fall off a touch, but it's still quite good. The citrus has pulled back a bit to reveal a little more of the bitter west coast base.

Bright lime citrus, some pine resin, and a body that reads crisp while still offering plenty of backbone. I might be picking up a little bit of hop burn at this stage of the game, but man, this one's a winner.

Still pretty pleased with this one: dry, crisp body with mild saison funk. Simple but no real flaws and very sessionable. It's also cleared up pretty nicely, so it's looking good too.

It's a decent beer, but I just had higher hopes for this recipe. The hop character is just so much mild - not quite sure if it's process or recipe (or some of both), but I'd hoped this beer would burst with juicy tropical fruit hoppiness.

Lovely yeasty esters that err towards fruit and bubblegum. Lemony hop character layers in nicely without overwhelming. It's fermented cleanly, but didn't attenuate *quite* as dryly as I'd like, leaving a whisper of sweetness - unsure if it helps or hurts.

Chris Knecht is drinking a Seòrsa Pils by Wolf's Head Brewing at Wolf's Head Brewpub
This beer is hitting a *lot* better today. The spicy/herbal hops are coming through quite nicely, in the nose all the way through the finish. I guess the warm spring weather must be bringing that character out?

The flavor in this beer is great, but the hop character didn't come through quite as brightly in this one as I'd hoped. Not sure if that's a result of process or recipe, but I'd want to reevaluate before trying this beer again (which I'd like to do).

Chris Knecht: Leading theory right now is that my CO2 balloon could have a small leak, which lead to some oxygen exposure.

Mixed feelings on this one. A lot went right: bready body that feels substantive, and the finish is crisp and refreshing. But I don't quite get the peppery/floral hoppy note I'd hoped for in the finish, and there is the slightest whisper of diacetyl.

Soft and fruity with tropical passionfruit notes. This one turned out pretty solid! Would've ideally liked the hop character to pop a little more, but it's still quite enjoyable.

Pungent pine and resin in the nose, followed by some orange citrus fruit before finishing bitter, crisp, and piney. It's a punch in the face that's gotta have crazy high IBUs, but I'm enjoying it.

End of this keg. Very pleased with this as the first sour attempt - mildly sour and easy-drinking with lemon and apple notes. Next time I'd get a little more aggressive with both souring and hopping.
